So I know this is really dorky. But I am so proud of myself, I have to share it with someone (aka: y’all).

I made the best potatoes EVER last night.

Seriously. The boyfriend said they were the best potatoes he had ever had in his entire life (and trust me, he is not one for fluffy compliments).

They took me forever, but it was so worth it. I really REALLY wanted to make roasted red skinned potatoes to go with this mustard salmon, but whenever I roast potatoes, they have a habit of coming out soggy.

Such a disappointment.

I was going to take a photo of the heavenly goodness, but we seriously ate them ridiculously fast. This lovely photo from smittenkitchen will have to suffice.


So this time around, I…

-cut the potatoes in half and par boiled them for 5 minutes in a pot of water with plenty of kosher salt

-drained them, slathered them in olive oil, herbs, and garlic.

-I put a baking pan with olive oil in the bottom into the oven to warm up the oil

-put the potatoes in (it was kind of scary–they hissed like crazy because of the hot oil), and covered with foil.

-popped ’em in a 425 degree oven for 20 minutes, flipping over halfway through.


-put them on a baking sheet, uncovered, for another 25 minutes, flipping over halfway through.

Good heavens they were amazing. Crunchy perfection on the outside, and soft, fluffy potato-ness on the inside.

Yes. It basically takes an hour. But trust me when I say (again) that it is SO incredibly worth it.
